Triple Cheese Ravioli

A typical recipe of lasagna has way too many servings for just too people and leaves a lot of leftovers. This imitation lasagna is great for two people and has all the flavors of lasagna. Plus, it's simple and quick to make after getting home at 6:00.

Prep: 25 minutes   Bake: 20 minutes 

4 oz. frozen cheese-filled ravioli or tortellini (about 1 cup) 
1/2 cup sliced mushrooms 
2 tablespoons chopped onions 
1 tablespoon chopped fresh or 1 teaspoon dried basil leaves 
2 tablespoons dry red wine or chicken broth 
Dash of salt 
Dash of pepper 
1 large tomato, chopped 
1/2 cup ricotta cheese 
2 tablespoons grated Parmesan cheese 

1. Heat oven to 325 degrees. Cook ravioli as directed on the package. 
2. Meanwhile, cook mushrooms, onions, basil, chicken broth, salt, pepper and tomato over medium heat in a skillet until the tomato is soft.

3. Drain ravioli. Place ravioli in ungreased loaf dish. Spread ricotta cheese over ravioli. Pour tomato sauce over top. Sprinkle with Parmesan cheese. Bake uncovered about 20 minutes or until hot.
