Lime Shrimp Quesadillas

Shrimp (enough for two people)
1 green pepper 
1/4 cup onion, chopped 
1 tablespoon olive oil
1/4 cup lime juice 
Dash of chili powder 
1/2 teaspoon cilantro 
Salt and Pepper 
6 tortilla shells (I used white shells for my husband and whole wheat shells for myself.)
Mexican cheese 
Salsa 
Sour Cream 
Avocado, cut into pieces 
1. If using frozen cooked shrimp, thaw shrimp in a bowl. 

2. After shrimp is thawed, place shrimp in a bowl with lime juice, dash of chili powder (to taste), cilantro, and salt and pepper. Marinate ten minutes. Meanwhile, cook onions and pepper in skillet until tender with olive oil.

3. Put shrimp mixture into skillet and cook until shrimp is heated through. Drain shrimp and pepper mixture.

4. Heat quesadilla maker. Put desired about of toppings on each tortilla along with avocado and cheese. Cook until golden brown. Serve with salsa and sour cream.
