Baked Tilapia with Coucous

1 cup pearl coucous
2 cups low-sodium chicken broth 
1/4 cup lemon juice
1/4 cup balsamic vinegar dressing
1 tablespoon dried cilantro
1 tablespoon dried basil
Salt and Pepper 
4 tilapia fillets, rinsed and patted dry 
1 can diced tomatoes
1 can great northern beans, drained and rinsed

1. Preheat oven to 400 degrees. Cook chicken broth in saucepan until boiling. Meanwhile, place couscous in bowl. Pour boiling chicken broth over couscous and cover with plastic wrap for 15 minutes.

2. Marinate tilapia fillets in shallow pie dish with lemon juice, cilantro, balsamic vinegar, basil, and salt and pepper. Place in refrigerator for 15 minutes.

3. Mix coucous, beans, and tomatoes together and place in 9 by 9 baking dish. Cover with tilapia. Bake at 400 for 30 minutes or until fish flakes.
