White Chili

Prep: 30 minutes 

Cook:25 minutes 
6 servings 

1 tablespoon oil 
2 medium onions, chopped
3 cups chicken broth 
2 tablespoons fresh cilantro or 1/2 teaspoon ground coriander 
2 tablespoons lime juice 
1 teaspoon ground cumin 
1/2 teaspoon dried oregano leaves 
1/4 teaspoon salt
1 can corn 
1 can great northern beans, drained 
1 can cannelloni beans, drained
2 cups chopped cooked chicken breast


1. Heat oil in 4-quart Dutch oven over medium heat. Cook onion in oil, stirring occasionally, until onions are tender.


2. Stir in remaining ingredients except chicken. Heat to boiling, reduce heat. Simmer, uncovered 20 minutes. Stir in chicken, simmer until hot. 



(Note: I do not know what cookbook this recipe came from. One of my good friend's step-mom made this recipe when my husband and I were visiting them in Michigan.)
