Easy Roasted Potatoes

To go with our Halibut Meuniere, my husband made us these delicious roasted potatoes which perfectly complimented the dinner. 

Prep: 10 minutes 
Roast: 55 minutes 
Oven: 325 degrees 
Makes: 4 servings 

3 medium round red or white potatoes (1 pound), cut into eighths
2 tablespoons olive oil 
1/2 teaspoon olive oil 
1/8 teaspoon paprika 

1. Place potatoes in a greased 9 by 9 by 2-inch baking pan. In a small bowl, combine oil, onion powder, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and paprika. Drizzle oil mixture over potatoes, tossing to coat. Roast, uncovered, in a 325 degree oven for 45 minutes. Stir potatoes; bake 10 to 20 minutes more or until potatoes are tender and brown on the edges.
