Cajun-Style Fish
Makes: 8 servings
1 cup chopped onion
2 teaspoons margarine
1 can diced tomatoes, undrained
1 large green bell pepper, chopped
2 cups cubed zucchini
1/2 teaspoon dried basil leaves
1/2 teaspoon dried thyme leaves
2-3 drops hot pepper sauce ( I used chili sauce to taste)
1 pound skinless fish fillets (flounder, sole, halibut, turbot or other lean white fish)
3 cups cooked rice, warm
1. Saute onion in margarine in large skillet until almost tender, about 5 minutes. Add tomatoes, green pepper, squash and herbs. Heat to boiling; reduce heat and cook covered, about 10 minutes or until vegetables are tender. Season to taste with hot pepper sauce, salt and pepper.
2. While vegetables are cooking, cook fish. Spray large skillet with cooking spray; heat over medium heat until hot. Add fish and cook over medium heat until fish is tender and flakes with a fork, about 4 minutes on each side. Season to taste with salt and pepper.
3. Spoon rice onto large serving platter; top with vegetables and fish.
