Turkey Meatballs with Tomato-Basil Sauce
4 servings
1 pound ground turkey
3/4 cup dry bread crumbs
1 medium onion, chopped
2 egg whites
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
1/4 teaspoon black pepper
1/2 cup white wine, or reduced-sodium fat-free chicken broth
Basic Tomato-Basil Sauce (recipe below)
1. Combine turkey, bread crumbs, onion, egg whites, oregano, basil, and pepper. This is best mixed with your hands. Slowly add wine to turkey mixture, mixing with hands until mixture forms large ball. Shape mixture into 16 meatballs and arrange in greased baking pan.
2. Bake at 350 degrees until meatballs are firm, about 15 minutes. Spoon Basic Tomato-Basil Sauce over meatballs and bake, loosely covered until meatballs are firm and no longer pink in center and sauce is bubbly, about 20 minutes. Spoon meatballs and sauce over cooked pasta, rice or polenta.

1/4 cup chopped fresh or 1-2 tablespoons dried basil leaves
1 tablespoon chopped fresh, or 1 teaspoon dried, oregano leaves
1/4 teaspoon pepper
1. Saute onion and garlic in oil in large saucepan until tender about 5 minutes. Stir in remaining ingredients; heat to boiling. Reduce heat and simmer, uncovered, until thickened, about 1 hour, stirring frequently.
