Beef Stew with Yukon Gold Potatos

Makes 4 servings 

1 pound beef for stew, cut into 1 inch chunks
1 can (14 oz) beef broth 
6 small yukon gold potatoes, cut into 2 inch chunks 
1 onion, cut into 1 1/2 inch chunks 
1 teaspoon dried thyme 
1 teaspoon salt 
1/4 teaspoon black pepper
2 tablespoons cornstarch 
2 tablespoons water 

1. Coat slow cooker with nonstick cooking spray. Combine all ingrediants, except cornstarch and water, in slow cooker; mix well. cover; cook on low 7 to 8 hours or on high 4 to 5 house, or until meat and vegetables are tender. 

2. Turn slow cooker to high. Combine starch and water; stir until smooth. Stir into cooking liquid. Cover; cook 15 minutes or until thickened. Serve.
